INGREDIENTS
For the Red Snapper:
4 red snapper filets, 4-6 oz each
2 zucchini, sliced into thin discs
1 cup Extra Virgin Olive Oil
Salt and pepper
1 cup Kalamata Olives, sliced
1 cup Cherry Tomatoes, sliced
3 Garlic Cloves, sliced
4 Sprigs Fresh Oregano
1 Red Onion, sliced
½ cup White Wine
2 Lemons
For the Crushed Potato Salad:
1 pound Fingerling or baby potatoes
Salt and pepper
1/2 cup Extra Virgin Olive Oil
2 Tablespoons Chopped Parsley
